What Your Body Is Already Trying to Make

I look at tissue for a living. Slides, microscopes, cell walls — what's there and what isn't. That's what a pathologist does. We work at the cellular level, where the real story of health lives long before symptoms ever show up.


After years of this, one pattern keeps coming back to me. Not in the tissue itself, but in the history behind it. What were people eating before they got here?


Right now, the wellness world is buzzing about peptides. You've probably seen the names — GLP-1, Ozempic, Mounjaro, peptide therapy. The pharmaceutical companies have done something genuinely impressive: they figured out how to take your body's own signaling molecules, recreate them in a lab, and deliver them directly. That is real science, and I'm not dismissing it.



But there's a conversation that isn't happening, and it should be.

Your body makes most of these signals on its own. It has always done this. What it needs to do that isn't a prescription. It's protein.


First, What Is a Peptide?

The word gets used a lot without much explanation. So let's keep it simple.

Carnosine: The Peptide You've Probably Never Heard Of

Most people haven't heard of carnosine. That doesn't make it less important.

Carnosine is a dipeptide — a two-amino-acid molecule made from beta-alanine and histidine — and it does quiet, steady work inside your muscles and cells. It helps buffer the acid that builds up during exercise, protecting your muscle tissue from fatigue. It supports how your cells produce energy. And it fights a process called glycation, where sugar molecules attach themselves to proteins in your body and break them down over time.

Glycation is linked to aging, inflammation, and metabolic disease. Researchers have studied carnosine's role across muscle, brain, and cellular health for decades. A comprehensive review published in Physiological Reviews in 2013 catalogued the breadth of carnosine's known biological functions and why it continues to attract serious scientific attention.

Here's the practical part. Carnosine isn't something you inject. You eat it. Beef skeletal muscle is one of the richest natural sources of carnosine in the human food supply. Plant foods contain almost none. This is one of the real nutritional differences that rarely gets mentioned when people debate what to eat.



Glutathione: Your Body's Built-In Defense System

Your liver is constantly making something called glutathione. It's often described as your body's master antioxidant. It helps neutralize toxins, support your immune system, and protect your cells from oxidative damage. Glutathione supplements have become popular, and you'll find them in health stores everywhere.



But your body makes glutathione on its own — from three amino acids: cysteine, glycine, and glutamate. Beef provides all three in forms your body can readily absorb and use. You don't need a supplement to support this process. You need the raw material. And the raw material is food.



This is the pattern behind all of it. The signal your body needs is rarely what's missing. What's missing is the material to build the signal in the first place.



Why Protein Quality Actually Matters

Not all protein does the same job. The amino acid profile matters. How well your body absorbs it matters. What comes with it matters.



Pasture-raised, grass-finished beef carries all nine essential amino acids — the ones your body cannot manufacture on its own and must get from food. Its digestibility is measured by something called the DIAAS score, a method developed by the Food and Agriculture Organization of the United Nations specifically to evaluate how usable a protein source actually is to the human body. Beef ranks among the highest of any food on this scale.

Grass-finished beef also has a better ratio of omega-3 to omega-6 fats compared to grain-finished beef. A 2010 review in Nutrition Journal analyzed three decades of research on feeding methods and confirmed that grass-based diets meaningfully improve both the omega-3 content and antioxidant levels in beef. This isn't a minor detail. Chronic inflammation — driven in part by an overload of omega-6 fats — can blunt how well your body's own signals work. You can have the right peptide in your system and still have a body too inflamed to respond to it properly.



A Word for Anyone on GLP-1 Medication

If you're currently taking semaglutide, tirzepatide, or another GLP-1 drug, this section is especially worth reading.



The STEP 1 clinical trial — published in the New England Journal of Medicine in 2021 — followed adults with obesity over 68 weeks on semaglutide 2.4 mg. Among participants who underwent body composition testing, total lean mass decreased by roughly 9.7% from baseline. That's not fat. That's muscle and lean tissue.



Muscle matters more than most people realize. It drives your resting metabolism. It supports your joints. It affects long-term strength and physical function. Losing it has consequences that tend to show up later in life.



High-quality protein is the primary nutritional tool for protecting lean mass during weight loss. This is well-supported science. If the diet alongside a GLP-1 medication is low in protein quality, the drug is working against a deficit that food should have addressed first. The medication and the food are not competing. They need each other
